Beetroot and feta cheese Carpaccio

Ingredients for 2 people

50g of green salad

300g beetroot

200g feta cheese

10g flax seeds

20g pine nuts

Canelli Extra Virgin Olive Oil

Salt and pepper to taste

Preparation

Toast the pine nuts for a few minutes in a pan and put them aside. Season the salad with salt, pepper and oil and spread it on the plate. Cut the beetroot in slices and place them on top of the salad. Finally cut the feta cheese into little cubes and place it over the beetroot. Sprinkle the dish with the flax seeds and pine nuts and complete with a drizzle of Canelli Extra Virgin Olive Oil.

Tips

Serve with toasted rye bread.
